Mop Heads & Cookies!

Mop heads & Cookies... Really Leslie?

But yes!!! There is a reason behind the craziness of the post! My creative energies are going crazy it seems! Some are better than others, so you decide if I'm nuts or what?!

Today I was fishing for something in my closet and this mop head fell out. I bought it not too long ago for moping my hardwood floors and haven't used it yet. I picked it up and put it on the table and then had this instant thought.. Hmm.. you might look good on my table in the interim. I put it under my candle holder and threw some Valentine cut-outs on it and wha-la, I have a 'Shaggy Doily'.

I was intrigued by a recipe that my friend "Donnie" posted the other day over at "New Blessing Everyday". Have you been there yet? If not, stop over to her blog, she's one hip chick! She posted a recipe for "Ranger Cookies". Hmm. Liking all the ingredients in it I decided to make it today!


Here's the recipe for those of you that didn't see it.

Ranger Cookies

1 cup shortening
1 cup white sugar
1 cup brown sugar
1 tsp. vanilla
2 eggs
2 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups Rice Krispies cereal
1 1/2 cups Rolled Oats
1 cup coconut

In the bowl of a stand mixer, cream together shortening, sugars and vanilla. Add eggs one at a time and blend well until smooth. In another bowl, whisk together flour, baking soda, baking powder and salt, then add to creamed mixture.  Stir in rolled oats, Rice Krispies, and coconut until well blended. Dough will be crumbly. Shape into walnut sized balls or use a cookie scoop and bake on ungreased cookie sheet for 10 minutes at 350' degrees.


Well Donnie, all I can say is that my family gave your recipe a big "Thumbs Up"! Thank you!

  1. That's great that you made the Ranger cookies. Don said where was his. They stay crisp for about 2 days then they start to moisten up a bit so you may want to eat a lot of them...lol....in the next 2 days. They should go great with the SuperBowl.

  3. Thanks Donnie - Both my husband and I like crispy cookies, and my daughter likes soft cookies, so I'm sure they'll satisfy us all.. Yes! I'm going to have a bowl full later for dessert with a nice cup of tea.. I put Don's in the mail. I shipped it to the address where he's getting his new pink recliner delivered to! HAHAHAHA

    Randy - Sure.. if you'd like them to be then yes... they are NY Ranger cookies.. lol..
